This is one of our favorite meals at our casa. Plus it's super easy to throw together. We try to have a veggie or two with most dinners, but the entrée is filling enough to stand on its own.
Korean Beef and Rice
{Six Sisters' Stuff}
1 pound lean ground beef
1/2 cup brown sugar
1/4 cup soy sauce
1/2 cup brown sugar

1 Tablespoon sesame oil
3 cloves garlic, minced
1/4 teaspoon ground ginger
1/2 – 1 teaspoon crushed red peppers (depending on how spicy you like it)
Salt and pepper
1 bunch green onions, diced

Rice, cooked
Heat a large skillet over medium heat and brown meat with garlic in the sesame oil. Drain most of the fat and add brown sugar, soy sauce, ginger, red pepper, and salt and pepper. Simmer for a few minutes to blend the flavors. Serve over steamed rice and top with green onions.
**I use basmati rice and think it goes perfectly with this meal. It's my favorite type of rice, and I almost always use it! Also, it tastes a little lighter to me.**

Spicy Sriracha Roasted Broccoli
{I Breathe I'm Hungry}
4 cups chopped broccoli
1/4 cup mayonnaise
2 teaspoons Sriracha
1 teaspoon soy sauce
1/2 teaspoon lime juice
Cook your broccoli in an oven safe dish in the microwave (on high) for 5 minutes. Alternatively you could steam it until bright green and still slightly firm.
Meanwhile, combine the mayo, sriracha, soy sauce and lime juice - stir well. Toss the broccoli in the sauce to coat.
Put under the broiler for 3-4 minutes until starting to brown and the sauce turns translucent. Remove, stir, and broil for another 2 minutes or so until lightly browned.
